Ravioli. "This was for Quince Restaurant in San Francisco, one of the most successful, high-end, Italian and French influenced fine dining locations in the city. I wanted to create a feeling of getting lost in this one ravioli, and push a different angle on a very traditional dish. On the top of the ravioli is a small truffle shaving—completely delicious and decadent."
